At The Grove, every spirit begins with intention. We craft in small batches, sourcing local ingredients whenever possible, like Southern Forests honey, and seeking out the finest elements from abroad, including Kentucky corn for our mash. The result is a range of spirits shaped by quality, craft and a deep respect for the process.
Meet Shannon
From early high school science experiments to barrel-aged ambitions, Shannon’s path into distilling has always been driven by curiosity, craft and a relentless pursuit of flavour. Today, he leads spirit production at The Grove, overseeing everything that happens behind the stills — and what goes into the barrel.
Shannon brings a fresh energy to the role, with a clear vision for the next chapter of The Grove built on three guiding principles: Recognition. Growth. Fun. It’s about respecting the foundations of the distillery while continuing to refine, experiment and push the range forward across whisky, rum, gin, vodka and liqueurs.
Hands-on, detail-focused and quietly ambitious, Shannon is here to raise the bar — and fill a few barrels along the way.

This is a casual, small-group experience where Shannon talks all things whisky, mash, peat and beyond — sharing how our spirits are made, the stories behind some of your favourites, and what’s currently bubbling away for the future. Expect plenty of insight, a few good yarns, and of course, a taste or two along the way.
